Yesterday was super warm out so we decided to cool down with a smoothie for lunch! This is one of my favorite smoothies and I love the energy boost I get after I drink it. The best thing about smoothies is how flexible and open ended they are, you can substitute just about anything!
1 cup of Coconut milk (more for a thinner smoothie)
1 cup of frozen strawberries ( I freeze them when I see them on sale and buy a ton – it also makes for a chilly / icy smoothie)
1/2 cup of cantaloupe
1 whole banana
3-4 Medjool dates (optional but I love the added sweetness)
BIG handful of spinach (or kale… I’m such a nerd for kale)
1 big tablespoon of organic raw spirulina powder for an added boost!
Blend on high until smooth ! If you are very sensitive to the taste of spirulina, add more melon. The sweetness from the cantaloupe cuts through it.
You can also freeze portions of this smoothie if you meal prep for the week. I use mason jars.
Fill the jar leaving 2 inches of room at the top for expansion, seal and freeze! Give yourself 24 hours for it to thaw in the fridge – I don’t recommend keeping them frozen for more than 5 days.
